Starting a café, decide this before you sign a lease

15 September 2026 · Anvit Consulting Services

Work the concept, catchment, labour and launch before the deposit leaves the account. Interiors can wait.

A café is a small kitchen with a public room attached. If you start with interiors, you are decorating a business you have not costed yet.

What to freeze first

Who it is for, on a weekday. Weekend crowds lie. A catchment that can support Tuesday 3pm is the real test.

What you are actually selling. Coffee and food are not a strategy. Throughput, ticket size and labour hours are.

The labour shape. A concept that needs a barista, a cook and a runner at all times has a different rent ceiling from a counter-service shop.

The licence and landlord path. We will walk you through the sequence and the questions. The filings still belong to the people you appoint.

What can wait

A second location. A merchandise line. A content studio. A custom app. Those are later problems. Most first cafés need a clear offer, a room that can be staffed, and a launch plan that continues after the opening photos.

If you want that held in one place (concept, brand, launch marketing, and the basic systems), that is the business and brand practice. The F&B page has more on the category.

Bring the catchment, the rent, and what you think a busy hour looks like. That is enough for a first conversation.
